Located on the outskirts of Saint Pierre des Champs, in an idyllic corner, halfway between Narbonne and Carcassonne, is the hotel restaurant La Fargo, built in an old Catalan forge of the 19th century. "When we bought it, there were only three standing walls and the garden that was kept by its former owner," Dominique told us. Currently, Dominique and Christophe Morellet have turned that old forge into a beautiful hotel-restaurant in the middle of a place full of nature: a small paradise.

The hotel has twelve rooms spread over two buildings: six in the building that was originally the forge and the rest in another building they built five years ago. This part also includes a heated pool, overlooking the valley, which maintains a temperature of 24 degrees thanks to geothermal energy.

All rooms are very spacious and cozy. Part of its charm is the furniture purchased expressly in Bali that gives them a colonial touch. In fact, the architecture of Bali It is also present in the construction and distribution of the rooms of the new part of the hotel, which have open bathrooms and views of the valley.

In the morning we have breakfast under a large frond of kiwis that cover the patio's pergola and give a very pleasant shade. These same kiwis in the form of jam served us for breakfast, along with fig jam, a fruit and muffin salad and French croissants.
